I love Sundays. I just enjoy lying in bed all day with cup of coffee or tea and doing nothing but reading a book or a magazine.
Actually, the best reason for loving the latest day of the week so much is because of my mom’s pancakes. When I was a child every Sunday she made the most delicious pancakes in the world! It was something like a ritual in our family, we never missed it.
When I grow up I tried to do my own pancakes a few times, but it didn’t work out. It was like a curse – “You’ll never make pancakes as good as your mother’s”. I gave up for a few years. But a few Sundays ago I wake up and I desperately wanted a few pancakes! Because I no longer live with my mom, I decided it was time to try again and make my own pancakes.
In fact, when you have Internet, you can learn how to make whatever you want! It’s just perfect for not perfect housewifes – like me!
I found a few recipes for pancakes and I decided to try each of them on Sundays. I started with
Delicious Pancakes from Scratch
I started with the easiest recipe – for good old fashioned pancakes. For 8 servings you need:
- 1 1/4 cups of milk
- 1 1/2 cups of flour
- 1 egg
- 3 tablespoons melted butter
- 1 tablespoon white sugar
- 1 teaspoon salt
The pancakes are ready in just 20 minutes. First all the ingredients are mixed together in a big bowl and after that the pancakes are fried in a frying pan over medium high heat. Don’t forget to pour the frying pan with butter, so that the pancakes don’t stick on it.
The pancakes were delicious, although I couldn’t flip them all well and some of them got ruptured. The outward wasn’t good, but with some cheese and marmalade they tasted good.
On Sunday Number Two I decided to make
Banana pancakes
The ingredients needed for this kind of pancakes, according to allrecipes.com. are:
- 1 cup of all-purpose flour
- 1 cup of milk
- 2 mashed bananas
- 1 tablespoon white sugar
- 1/4 teaspoon salt
- 1 egg, beaten
- 2 tablespoons vegetable oil
The preparation of banana pancakes is a little more complicate, so read the directions carefully.
- First mix together the egg, milk, vegetable oil and bananas. In another bowl put the white sugar, flour, baking powder and salt.
- Put the two mixtures together.
- 4 Heat the griddle to medium high heat. Use 1/4 cup of the mixture for each pancake. Cook until the pancakes become golden brown on both sides. Serve them hot with chocolate or vanilla. (If you ask me – definitely chocolate!)
I’m not a healthy food maniac. In fact, I eat everything I find delicious, including junk food. But as I was searching for pancakes recipes on Internet for my 3rd sunday pancake breakfast I incidentally found a recipe for Protein pancakes and I thought “Let’s give them a try”.
Protein pancakes
Two pancakes include 48 g protein, 592 calories, 29 g fat and 39 g fat, (if you’re interested in these facts.) The ingredients needed are:
- 2 whole eggs
- 5 egg whites
- 1 cup oats
- 1 sliced banana
- 1 cup of berries
- 2 scoops protein powder
- 2 tablespoons peanut butter
- 2 tablespoons coconut oil
- cinnamon
Instructions to make the pancakes:
- Put the oats in a bowl.
- Add the eggs and egg whites and beat.
- Add the protein, banana, berries, and peanut butter and mix it up.
- Sprinkle cinnamon over the mixture.
- Heat the pan on high heat and add coconut oil.
- Fry the pancakes for a few minutes.
The protein pancakes were great! It feels good to enjoy a healthy and delicious meal. My husband also liked them a lot. He got so excited that he dropped one of them on the floor. There was a marmalade stain on the carpet. I tried to clean it with the first detergent I found in closet, but it became even worse. But remained calm, I just call a professional carpet cleaning company, which services I had already used. The experts took care of the ugly stain in just a few minutes.
Ok, enough with the cleaning. Let’s get back to the pancakes. The pancakes became a Sunday tradition again. This time I’m making them on my own.
